Prosciutto, Mozzarella, and Melon Salad

This salad is perfect for keeping in shape, it contains serrano ham (or prosciutto), fresh mozzarella cheese, melon, and a very good mint dressing.

  • 1 melon
  • 170 grams fresh Mozzarella cheese, (ideally in balls)
  • 6 slices serrano ham, in thick slices
  • 2 tablespoons vinegar
  • 6 tablespoons olive oil
  • 1 teaspoon icing sugar
  • 1 teaspoon Dijon mustard
  • 2 tablespoons peppermint, finely chopped
  • pepper, to taste
  • arugulas, or spinach

  • Cut the melon into cubes or balls (with a special spoon for making balls).
  • Cut the mozzarella into cubes (or if already in balls, cut in half).
  • Prepare the dressing: mix vinegar, oil, sugar, mustard, and mint. Add salt and pepper to taste.
  • Place melon balls, mozzarella balls, and a slice of prosciutto cut into 3 on each plate (arrange nicely on the plate).
  • Put a little dressing on top of each plate and serve.
