This recipe is very simple and is excellent to accompany any dish, or even as a main course if two zucchinis are served and the filling protein is increased.
100 grams turkey deli ham, or thinly sliced turkey breast
1 tablespoon sour cream , low in fat
100 grams Oaxaca cheese, shredded
4 slices Manchego cheese
1/2 teaspoons unsalted butter
4 slices turkey bacon
spinach, cooked (optional)
salt , and pepper to taste

The zucchinis are boiled in salted water for 20 minutes until they are soft when pierced with a knife.
The stems of the zucchinis are cut off and the filling is removed. They are smeared inside with butter and a little salt and pepper is added.
The filling of the zucchini is blended with diced ham, cream, Oaxaca cheese, bacon, and spinach. It is seasoned to taste with salt, pepper, and a touch of nutmeg (not too much since the zucchini already has salt and pepper).
The zucchinis are filled and topped with a slice of Manchego cheese.
They are placed in an electric oven or conventional oven at medium temperature for 10 minutes or until gratinated.
