Green Bean Salad

This salad is very original thanks to the lightly cooked green beans and radishes.

  • 6 cups arugula
  • 1 fennel, julienned
  • 2 cups green beans, cut into pieces
  • 6 radishes, sliced
  • 1/2 cups olive oil
  • 1/2 cups Parmesan cheese
  • 1/4 cups sour cream
  • 2 tablespoons white wine vinegar
  • pepper , to taste

  • Bring 2 cups of water to a boil in a pot. Once boiling, cook the green beans for 2 minutes, remove from the water, and place in ice.
  • In a large bowl, combine the lettuces with the green beans, fennel, and radishes.
  • In another bowl, mix the vinaigrette (olive oil, Parmesan cheese, cream, vinegar, salt, and pepper).
  • Pour the dressing over the salad, mix well, and serve.
