Wash and chop the lettuce, place it in a salad bowl or bowl. Cut the orange and peppers into slices and place them on top of the lettuce. Black olives can be added if desired.
In a separate container, prepare the dressing by mixing the oil, honey, mustard, salt, and pepper; if desired, a tablespoon of apple cider vinegar can be added.
Drizzle the salad with the dressing and garnish with thyme.
