Wash and cut the lettuce, place in a bowl or salad bowl. Cut the orange and peppers into slices and place on the lettuce. Black olives can be added if desired.
In a separate bowl prepare the dressing, mix the oil, honey, mustard, salt and pepper, if desired you can add a tablespoon of apple cider vinegar.
Sprinkle the salad with the dressing and decorate with thyme.
