Lettuce Hearts with Tuna and Olive Vinaigrette

This little salad of lettuce hearts filled with sautéed tuna fillet is the ideal option for this Lent. They are accompanied by an exquisite olive vinaigrette and toasted sesame seeds. Irresistible!

  • 4 tuna loins
  • 1 teaspoon Great Value® plain salt
  • 1/2 teaspoons pepper
  • 2 tablespoons soybean oil
  • 1/4 cups white vinegar
  • 1 Extra Special® soft garlic cloves with fine herbs, (just one clove of garlic)
  • 1 tablespoon capers
  • 2 tablespoons parsley
  • 2 tablespoons olives, boneless
  • 2 pinches pepper
  • 1/2 cups Extra Special® extra virgin olive oil with rosemary
  • 2 avocados, in cubes
  • 2 tomatoes, in cubes
  • 2 mangoes, in cubes
  • 4 tablespoons red onion, finely chopped
  • 1 cup Extra Special® hearts of palm
  • 4 lettuce, hearts
  • 4 teaspoons sesame seeds, toasted

  • Season the tuna with salt and pepper on both sides and sear in a hot pan over high heat with soy oil for 2 minutes on each side. Slice thinly and set aside.
  • For the vinaigrette, blend the vinegar with the garlic, capers, parsley, olives, and pepper. While blending, incorporate the olive oil in a thin stream.
  • In a bowl, combine the avocado with the tomato, mango, red onion, and hearts of palm. Add a little of the vinaigrette and adjust the seasoning.
  • Serve the lettuce hearts, place some slices of tuna on top, and add the avocado salad. Garnish with toasted sesame seeds and serve with more vinaigrette. Buy HERE
