Lettuce Wraps with Meat and Guajillo in Oriental Style

  • 12 mixed lettuce
  • 1 tablespoon vegetable oil
  • 1/2 red onions, diced
  • 2 cloves garlic, chopped
  • 2 pounds ground meat
  • 2 pounds ground meat
  • 1/4 teaspoons ground black pepper
  • 1/4 cups orange juice
  • 1 teaspoon honey
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoons guajillo chile, ground
  • 1 teaspoon rice vinegar
  • 1/2 cups carrot , julienned
  • 1 cucumber, medium, seeded and cut into sticks

  • Wash the lettuce leaves gently and dry them softly to avoid tearing. Set aside.
  • In a large non-stick skillet, heat oil over high temperature.
  • Add the red onion and garlic and cook for 3 minutes.
  • Add the ground meat and cook for 5 minutes, breaking up the meat with a spoon.
  • Remove the fat and place the skillet back on the heat.
  • Reduce to medium heat. Season with salt and pepper.
  • Add the orange juice, honey, soy sauce, sesame oil, and ground guajillo, and stir.
  • Cook until the sauce thickens, about 3 to 4 minutes.
  • With a spoon, place the meat mixture onto the lettuce leaves.
  • Add the carrots and cucumbers and place on a large platter.
  • Serve with lime wedges.
