12 mixed lettuce
1 tablespoon vegetable oil
1/2 red onions, diced
2 cloves garlic, chopped
2 pounds ground meat
2 pounds ground meat
1/4 teaspoons ground black pepper
1/4 cups orange juice
1 teaspoon honey
2 tablespoons soy sauce
1 tablespoon sesame oil
1/4 teaspoons guajillo chile, ground
1 teaspoon rice vinegar
1/2 cups carrot , julienned
1 cucumber, medium, seeded and cut into sticks

Wash the lettuce leaves gently and dry them softly to avoid tearing. Set aside.
In a large non-stick skillet, heat oil over high temperature.
Add the red onion and garlic and cook for 3 minutes.
Add the ground meat and cook for 5 minutes, breaking up the meat with a spoon.
Remove the fat and place the skillet back on the heat.
Reduce to medium heat. Season with salt and pepper.
Add the orange juice, honey, soy sauce, sesame oil, and ground guajillo, and stir.
Cook until the sauce thickens, about 3 to 4 minutes.
With a spoon, place the meat mixture onto the lettuce leaves.
Add the carrots and cucumbers and place on a large platter.
Serve with lime wedges.
