1 tablespoon all-purpose wheat flour, all-purpose
1 teaspoon table salt
2/3 cups evaporated milk
1/3 cups orange juice
1 egg, large, well beaten
3 cups chicken breast, meat..., chopped, boneless, and skinless
3 stems celery, large, thinly sliced
3/4 cups almonds, sliced, toasted
2 tablespoons chives
1 can mandarin orange, drained
1/2 heads lettuce

Combine the sugar, flour, and salt in a medium heavy-bottomed saucepan; gradually stir in the evaporated milk, orange juice, and egg.
Cook over medium heat, stirring constantly, until the dressing begins to boil and thickens.
Remove from heat. Cover and refrigerate until cold.
Combine the chicken, celery, almonds, half of the dressing, and green onions in a large bowl.
Add the mandarins and stir gently.
Cover; refrigerate for 2 hours. Serve over lettuce leaves. Serve with the remaining dressing as desired.
