Mandarin Salad

You are going to love this mandarin salad, as it has a very special seasonal flavor thanks to the citrus flavor of the mandarin. In addition, it is an ideal option to accompany turkey, tenderloin or fish at Christmas.

  • 1 Eva® butterhead lettuce
  • 1/2 cups olive oil, for the vinaigrette
  • 2 tablespoons balsamic vinegar, for the vinaigrette
  • 1/2 tablespoons honey, for the vinaigrette
  • 2 tablespoons mandarin orange juice, for the vinaigrette
  • salt, for the vinaigrette
  • pepper, for the vinaigrette
  • 2 mandarin oranges
  • 1/4 cups walnuts
  • 1/4 cups cranberries
  • 1/2 cups feta cheese, in cubes
  • 2 tablespoons chia seeds

  • Prepare the vinaigrette: Mix the olive oil with the balsamic vinegar, the honey, the orange juice, enough salt and pepper in a bowl, then mix with a balloon whisk until you get a uniform or emulsified mixture. Reserve until use.
  • Cut mandarin supremes, that is, remove the mandarin segments and keep only the pulp, then, with a small knife remove all the peel, then make incisions with the knife between the pulp and the segment, to remove the supreme in a manner complete. Reserve until use.
  • In a bowl, place the Eva® French Lettuce leaves, place the mandarin supreme, walnuts, blueberries, feta cheese and chia seeds. Top the mandarin salad with the balsamic vinegar and tangerine dressing. Mix and serve immediately.
