Mango Shan Salad

This sweet and sour mango salad is the perfect side to a spicy meal.

  • 1 mango, a little green
  • 1 shallot, sliced
  • 1 serrano chile, optional
  • 1 teaspoon sugar
  • 1 tablespoon rice vinegar
  • 1 sprig parsley, chopped

  • Peel the mango and dice it.
  • Mix with the sliced shallot and parsley, if I wish I can add minced chili.
  • Season with the sugar, salt and rice vinegar.
