1 mango, a little green
1 shallot, sliced
1 serrano chile, optional
1 teaspoon sugar
1 tablespoon rice vinegar
1 sprig parsley, chopped

Peel the mango and dice it.
Mix with the sliced shallot and parsley, if I wish I can add minced chili.
Season with the sugar, salt and rice vinegar.
