Morelian Gazpacho

  • 3 mangoes
  • 1 jicama, peeled
  • pinches salt
  • 1/4 cups lime juice, seedless
  • 2 cups orange juice, seedless
  • Cotija cheese, crumbled
  • chile powder

  • On a cutting board and with the help of a knife, remove the skin from the pineapple, cut it in half to have a base for support, cut medium cubes, and set aside. Repeat this process with the mango and jicama.
  • In a bowl, mix the chopped fruits, add salt and lemon juice, and incorporate.
  • Fill a cup with fruit until it reaches half its capacity, add crumbled Cotija cheese and chili piquín to taste; add more fruit until the cup is full and pour orange juice.
  • On top of the cup, add more Cotija cheese, chili powder, and hot sauce to taste.
