  • 1/4 cups lime juice, for the vinaigrette
  • 1 clove garlic, for the vinaigrette
  • 3 tablespoons honey, for the vinaigrette
  • pinches salt, for the vinaigrette
  • pepper, for the vinaigrette
  • 1/2 cups olive oil, for the vinaigrette (or 2 teaspoons for a lighter version)
  • 3 nopales, cut into strips
  • 1/3 cups coarse salt, or 1 teaspoon
  • 1/4 red onions, sliced
  • 1/2 cups beans, cooked, without liquid
  • 1/4 cups fresh cilantro, finely chopped
  • 1 cup tomato, in cubes
  • 1 pinch oregano
  • 1/2 avocados, cut into wedges, for decoration

  • For the vinaigrette, blend the lime juice with the garlic, honey, salt, pepper, and add the olive oil in a steady stream.
  • In a bowl, mix the nopales with the coarse salt and rub them with your hands until they have a smooth consistency and take on a bright green color. Rinse them well to remove the slime and excess salt. Drain very well.
  • Mix the nopales with the red onion, beans, cilantro, tomato, oregano, and the vinaigrette. Adjust seasoning.
  • Serve the salad and garnish with avocado.
