Oriental-style salad

  • 1 clove garlic, chopped
  • limes, tea
  • canola oil
  • 1 tablespoon ginger, chopped
  • black pepper powder
  • salt
  • 1 dried árbol chile, chopped
  • 1/3 cups fresh cilantro, stems
  • 1/3 cups vinegar, mirin
  • 2 tablespoons lime juice
  • 2/3 cups orange juice
  • 1/3 cups soy sauce
  • 500 grams ax callus
  • 2 tablespoons unsalted butter
  • 2 teaspoons canola oil
  • 4 bunches fidelini pasta, oriental noodles, rehydrated in warm water
  • 1 cup papaya, in sticks
  • 1 cup mango, in medium cubes
  • 1/2 cups scallion, tails, chopped
  • fresh cilantro, for garnish

  • Mix soy sauce, orange juice, lemon juice, mirin vinegar, salt, and pepper in a bowl.
  • Add papaya, mango, green onion tails, and cilantro. Set aside.
  • Sauté ginger, garlic, and tripe in butter and oil.
  • Add the árbol chili and salt. Chill.
  • Mix noodles with the previous mixture and add the fruit vinaigrette.
  • Garnish with cilantro leaves.
  • NOTE: It is not necessary to cook the oriental noodle in boiling water. It can be rehydrated in hot water and then drained.
