5 cups french bread, cut into large cubes
1/3 cups olive oil
1/3 cups red wine vinegar
3 tablespoons lemon juice
3 tablespoons fresh parsley, chopped
1 tablespoon garlic
2 cucumbers, seedless and diced
2 tomatoes, seedless and diced
1 red onion, finely chopped
1/3 cups pitted kalamata olive
1/3 cups basil

Preheat the oven to 180 degrees Celsius.
On a baking sheet, place the bread cubes and bake for 10 minutes or until the bread is lightly toasted.
In a large bowl, combine the croutons with the cucumbers, tomatoes, onion, olives, and basil.
In a small bowl, mix the vinaigrette: the oil, vinegar, lemon juice, parsley, and garlic.
Add the vinaigrette to the salad and mix well.
