Panzanella

Panzanella salad is a salad made with tomatoes, baked bread, garlic, lemon, onion, and olives.

  • 5 cups french bread, cut into large cubes
  • 1/3 cups olive oil
  • 1/3 cups red wine vinegar
  • 3 tablespoons lemon juice
  • 3 tablespoons fresh parsley, chopped
  • 1 tablespoon garlic
  • 2 cucumbers, seedless and diced
  • 2 tomatoes, seedless and diced
  • 1 red onion, finely chopped
  • 1/3 cups pitted kalamata olive
  • 1/3 cups basil

  • Preheat the oven to 180 degrees Celsius.
  • On a baking sheet, place the bread cubes and bake for 10 minutes or until the bread is lightly toasted.
  • In a large bowl, combine the croutons with the cucumbers, tomatoes, onion, olives, and basil.
  • In a small bowl, mix the vinaigrette: the oil, vinegar, lemon juice, parsley, and garlic.
  • Add the vinaigrette to the salad and mix well.
