Pasta Salad to Go

This pasta salad is perfect for taking to work or school, as everything can be prepared in no time. It features hearts of palm and bell peppers, with delicious vegetable pasta and a tasty apricot vinaigrette!

  • 2 liters water
  • 1 tablespoon salt
  • 1 package elbow pasta La Moderna®, vegetable pasta 200 g
  • 1 cup olive oil, for the vinaigrette
  • 1/3 cups white vinegar, for the vinaigrette
  • 2 tablespoons apricot jam, for the vinaigrette
  • 2 tablespoons orange juice, for the vinaigrette
  • 1 teaspoon salt, for the vinaigrette
  • 1/2 teaspoons pepper, for the vinaigrette
  • 4 bell peppers, in strips
  • 1 cup heart of palm, sliced
  • 1 cucumber, in cubes

  • In a small pot with boiling water and salt, cook La Moderna® coconut pasta until al dente. Drain and cool.
  • In a bowl, mix all the vinaigrette ingredients and divide into four glass jars with lids.
  • Add the pasta, bell peppers, hearts of palm, cucumbers, corn, spinach, and finish with sunflower seeds.
  • Seal and store in the refrigerator.
