Pasta Salad with Caprese-Style Pesto

Treat mom with this delicious pasta salad with Caprese-style pesto; it is very easy to prepare and is ideal to accompany any type of food. Its intense pesto flavor combined with cherry tomatoes and the freshness of mozzarella cheese is spectacular.

  • 4 liters water, (1 L per 100g pasta)
  • salt
  • 1 package La Moderna® rotini with vegetables, 450 g each
  • 100 grams basil
  • 1 clove garlic
  • 1/3 cups walnuts
  • 3/4 cups olive oil
  • 1/2 cups Parmesan cheese
  • salt and pepper
  • 2 cups cherry tomato
  • 2 cups Mozzarella cheese, in pearls

  • In a pot, boil water and when it starts to boil, add salt, wait for it to regain temperature, and add La Moderna® Rotini Pasta with Vegetables; cook according to package instructions. Drain, cool, and set aside.
  • In a processor, add basil, garlic, and walnuts until you achieve a homogeneous paste, incorporate the olive oil in a thin stream until achieving a good consistency, then add Parmesan cheese, salt, and pepper.
  • In a bowl, pour the pesto sauce and add cherry tomatoes and mozzarella cheese, mix and let rest for 10 minutes.
  • In a bowl, add La Moderna® Rotini Pasta with Vegetables and the pesto sauce, mix until everything is incorporated.
  • Serve in a slightly deep plate and garnish with fresh basil.
