Caprese Style Pasta Salad

Indulge your mom with this delicious caprese style pasta salad, it is very simple to prepare and is ideal to serve with any type of food. Its intense pesto flavor combined with cherry tomatoes, and the freshness of mozzarella cheese is spectacular.

  • 4 liters water, (1 L per c/100g pasta)
  • salt
  • 1 package La Moderna® rotini with vegetables, 450 g each
  • 100 grams basil
  • 1 clove garlic
  • 1/3 cups walnuts
  • 3/4 cups olive oil
  • 1/2 cups Parmesan cheese
  • salt and pepper
  • 2 cups cherry tomato
  • 2 cups Mozzarella cheese, pearls

  • In a pot, boil the water and bring to a boil then add the salt, wait to recover temperature, and add the Rotini pasta with Vegetales La Moderna®, cook according to the packaging instructions. Drain, cool and reserve.
  • In a food processor add the basil, garlic, and pecans until you get a homogeneous paste, add the olive oil slowly in a strand to achieve a good consistency, add the Parmesan cheese, salt and pepper.
  • In a bowl, pour the pesto sauce and add the cherry tomatoes and mozzarella cheese, mix and let stand for 10 minutes.
  • In a bowl add Rotini pasta with Vegetales La Moderna® and pesto sauce, mix until everything is incorporated.
  • Serve in a shallow dish and garnish with fresh basil.
