Pasta Salad with Quinoa

Salad full of flavors and textures that you can enjoy in every bite. This salad is my inspiration and I really liked the result. It contains quinoa, noodles, a combination of lettuces, apple, and cashews. The touch that cannot be missed is the fennel.

  • 1/2 cups fideo pasta, #0 La Moderna®
  • 3 sprigs fennel
  • 1 apple
  • 1/4 cups cashews
  • 2 tablespoons Parmesan cheese, in slices
  • 1/4 cups quinoa
  • 1/2 cups water
  • 8 leaves mint leaf
  • 3 lemons, its juice
  • salt
  • pepper
  • 5 tablespoons olive oil
  • 2 cups mixed lettuce

  • For the quinoa: In a pot, heat the quinoa with water over high heat until it boils. Lower the flame and cook covered until the water is absorbed (about 10 min).
  • For the noodles: In another pot, boil enough water, add a little salt and the noodles. Cook over medium heat for a few minutes. Remove from heat, place in cold water to stop the cooking process, and drain.
  • For the lettuce: If it is already ready for consumption, it does not need to be disinfected; otherwise, that process is essential.
  • Cut the apple into not too thin wedges. If they are not going to be consumed immediately, they should be placed in a container with water and a few drops of lemon to prevent oxidation.
  • Cut the cashews in half.
  • For the dressing: In a small bowl, squeeze the juice of the lemons, add the finely chopped mint leaves, salt, pepper, and gradually the olive oil, mixing with a spoon. Set aside.
