80 grams unsalted butter , for Spaghetti La Moderna®

For Spaghetti La Moderna®, in a pot approximately 30 cm in diameter and 8 cm deep, or where the Spaghetti La Moderna® fits well, fill with 2/3 of water and bring to a boil with 2 tablespoons of oil and a pinch of salt. Once the water is boiling, add the Spaghetti La Moderna® and cook for 10 minutes over low heat, being careful that it doesn't stick to the bottom of the pot and stirring gently to avoid breaking the pasta. Then turn off the heat and let it sit for another 5 minutes. Drain and rinse with cold water.
We wash the pot and dry it perfectly to prepare the Spaghetti La Moderna®. We take 30 g of butter with a splash of oil to prevent it from becoming bitter or burning and heat the pot over medium heat. Once hot, we pour in the Spaghetti La Moderna® and stir to prevent sticking. We add another 40 g of butter in cubes scattered over the pasta, the 2 tablespoons of cilantro, and season with garlic salt and pepper to taste. We let it cool away from the stove.
For the Chicken: In a skillet, put 10 g of butter and heat over medium heat. To prevent the butter from burning or becoming bitter, add a splash of oil. Once hot, add the chicken breasts cut in half and fry until one side is golden, and before flipping, season with garlic salt and pepper to taste and flip to brown the other side, ensuring that the inside of the chicken is perfectly cooked. To check, take a piece, make a cut in the thickest part, and if it's ready, transfer it to a plate. Remove any excess butter if there is any left.
Once the chicken is cooked, we cut it into approximately 1 cm cubes and set it aside to mix with the other ingredients.
For the Sangría Lettuce, we separate its leaves, using about half a lettuce; we wash them under running water and let them soak in a bowl with disinfectant for about 10 minutes.
We wash the rest of the ingredients well. For the tomato, we remove the stem, cut it in half lengthwise, and then slice it.
For the onions, of similar sizes, we remove the dry layers. For the white onion, we take about 4 cm, cut it, and then slice it thinly. For the red onion, we take a bit more, about 6 cm, and cut it the same way into thin slices.
From the cilantro, we take a few sprigs (about 10-15), wash, and drain well. We separate the leaves from the stems, and we finely chop the leaves.
For the Carrot, we wash it well and use a peeler to remove the outer layer of the carrot. We pass it through a medium grater and grate it carefully.
We leave the apple for last to avoid it turning dark. We take the apple, remove the core, and peel it to get rid of the skin. We cut it in half and slice it into 1 cm wide slices, then cut into cubes of 1 cm x 1 cm. To preserve the apple without wilting, we let it soak in a bowl with water and a little juice from half a lemon.
For the avocado, we cut it in half, remove the pit, and cut it into 1 cm x 1 cm cubes without removing it from the skin.
We cut the lemon and squeeze it, then set it aside to mix.
In a large bowl, we will pour the Spaghetti La Moderna®, cutting it slightly so that the noodles are not too long. We add the lettuce, tomato, onions, carrot, cilantro, drained apple, avocado, and mix until the ingredients are integrated. We add the lemon juice and season with garlic salt and pepper to taste.
It is served, and we can accompany it with our favorite dressing and crackers or bread to taste. ENJOY YOUR MEAL!
