This is a pasta version of one of my favorite salads to impress on any occasion, and it is very easy to make; just remember that the ingredients should always be fresh and of the best quality to achieve a splendid result. You will notice that the mix of green vegetables with fruits accompanied by the walnut sauce can complement a multitude of dishes or simply serve as a tasty and healthy snack.
First, we are going to cook the pasta. We heat 4 liters of water, and once it starts boiling, we will add 10 ml of vegetable oil and 50 gr of sugar along with the pasta. We will cook it for a period of 4 to 5 minutes until, when tested, it has a firm yet cooked texture. Once done, we drain it, sprinkle 1 tablespoon of olive oil, and set it aside to cool so it doesn't wilt our vegetables.
It is very important to wash and disinfect the vegetables and fruits we use in salads as a preventive measure. Once done, we will remove the white part from the lettuce leaves and cut them in half. We will also remove the stems from the spinach, leaving only the leaves; to present them, we will tear them by hand to the size of our thumb and set them aside.
Now it's time to prepare our dressing. For this, we will put the can of half cream, 50 gr of acitrón, and 100 grams of walnuts in the blender until we obtain a somewhat thick sauce.
We still need to prepare the fruits. First, we will peel the mango and cut it into 5mm cubes; we will remove the leaves from the strawberries and cut them into quarters, and finally, we will slice the pear into wedges.
Now it’s time to assemble it. First, we place a base of lettuce with spinach, then a portion of elbows. We add the pear wedges in a circular shape as if we wanted to mark the hours on a clock, and between each wedge, we place strawberries. In the center, we will place the mango cubes. Finally, we decorate with the walnut dressing and sprinkle with powdered cinnamon.
Now it's time to enjoy. Remember that I am only suggesting a presentation; you can arrange it to your liking. The beauty of this salad lies in the colors that make it up in addition to its flavor. You will see that this dressing is a marvel and pairs perfectly with both sweet and savory preparations.
