Potato Salad

This potato salad is delicious; it can be eaten at room temperature or cold. The combination of potato, egg, cucumber, onion, vinegar, and olive oil is perfect, fresh, and tasty. Don't think twice and prepare it.

  • 1 kilo potato, medium
  • 4 tablespoons olive oil
  • 2 tablespoons vinegar
  • 1 cup beef broth
  • 1/4 cups red onion, chopped
  • 1 cucumber, sliced
  • 1 egg, hard-boiled

  • Choose firm potatoes and cook in salted water until soft, about 20 minutes. When still warm, peel and slice them into thick slices.
  • Place them in a round baking dish and add the oil, vinegar, onion, and warm beef broth. Cover with plastic wrap and shake the dish to combine all the ingredients without breaking the potatoes. Let it rest overnight or for a few hours.
  • Before serving, add pepper, chopped cucumbers, and a few drops of olive oil, and adjust the salt. Transfer to a serving platter and garnish with the hard-boiled egg, peeled and cut into quarters.
