1/2 cups red onion, chopped
1 cup mayonnaise
1/2 cups mustard
1 green bell pepper
2 cups mortadella
1 cup celery
salt and pepper

Cut the bologna into thick cubes and transfer to a bowl.
Add chopped celery and diced precooked potatoes, mix with the bologna and season.
Incorporate finely chopped red onion, mustard, and mayonnaise. Mix again.
Add fresh parsley leaves.
Serve the bologna and potato salad with toasted bread or croutons.
