Rustic Potato and Tomato Salad

A wonderful combination, the neutrality of the potato with the personality of the roasted pepper. Fresh and full of flavor, this salad serves as a good starter or to accompany grilled meat.

  • 2 tomatillos, peeled
  • 2 potatoes, boiled in their skin and then peeled
  • salt , to taste
  • 4 red bell peppers, roasted
  • 1 lettuce, well washed
  • 16 black olives
  • 1 sprig parsley
  • 3 tablespoons olive oil

  • Choose a wide and flat dish, place the tomato slices (without overlapping) at the bottom.
  • Season the tomato with salt and cover with the potato slices.
  • Arrange the lettuce leaves on the sides of the dish without cutting them.
  • Chop the parsley finely and the peppers (previously peeled) into strips & place over the potatoes.
  • Drizzle with a thread of olive oil and top with the olives. SERVE IMMEDIATELY.
