2 bell pepper, roasted
1 lime
1/4 tablespoons cinnamon
1/2 tablespoons paprika, or piquin chili
2 tablespoons olive oil
salt, to taste
1 tablespoon parsley, chopped
pepper, to taste

Prepare the vinaigrette by mixing lemon juice and spices. Add the olive oil.
In a deep bowl, mix the tomato and peppers with the vinaigrette.
Place in a glass salad bowl and garnish with parsley and salt and pepper to taste.
