Salad with Arrachera and Spinach Chimichurri

A salad with grilled meat is a delight, plus it is a complete and practical dish, as you can’t imagine how quick it will be to prepare with Asian Chopped Salad Eva®, which includes all the chopped ingredients ready to eat, and it already comes with a soy sauce and lemon. With the chimichurri, it will be a mix that will surprise you and help you balance your dishes quickly and deliciously.

  • 5 cloves garlic, for the chimichurri
  • 3/4 cups olive oil, for the chimichurri
  • 2 cups spinach, just leaves, for the chimichurri
  • 1 cup parsley, just leaves, for the chimichurri
  • 1 tablespoon chile flakes, for the chimichurri
  • 1 tablespoon oregano, for the chimichurri
  • 2 tablespoons red wine vinegar, for the chimichurri
  • 2 tablespoons lime juice, for the chimichurri

  • 600 grams skirt steak, without marinating

  • 1 cup cherry tomato, red, halved
  • 1/2 cups red onion
  • 1/2 cups cilantro

  • For the chimichurri, in a blender or with an immersion blender, blend the garlic cloves together with the olive oil, spinach, and parsley until you obtain a homogeneous mixture.
  • Pour the mixture into a bowl and add the chili flakes, oregano, red wine vinegar, lemon juice, season with salt and pepper, and then pour in the olive oil. Mix with a spoon or whisk until fully combined. Reserve until use.
  • For the arrachera, on a sufficiently hot grill pan, cook the arrachera until it reaches the desired doneness and season with pepper; we recommend cooking for 8 minutes on both sides. Remove from heat, place on a cutting board, and cut into thick strips.
  • To assemble the salad, simply open your Asian Chopped Salad Eva® bag and pour it into a bowl, add the included soy sauce and lemon, and mix. On top, place the thick strips of arrachera, add plenty of cherry tomatoes on one side, a bit of red onion, and cilantro leaves. Remember to add the corn tortilla, the caramelized sesame, and the almond from the Asian Chopped Salad Eva® as toppings, add the spinach chimichurri to the meat, and your salad is ready to eat.
