Salad with Goat Cheese and Granola

This is a delicious goat cheese salad with granola. It features a rich orange vinaigrette. It is very easy and quick to make. It has a perfect contrast of textures, the soft and creamy goat cheese and the crunchiness of Kellogg’s® Ancient Grains Granola; sunflower seeds, amaranth, raisins.

  • 1/2 cups Kellogg’S® granola ancestral grains; sunflower seeds, amaranth and raisins
  • 2 cups green lettuce, washed and disinfected
  • 1/4 cups chicken breast, shredded
  • 1/2 cups goat cheese
  • 2 tablespoons black olives
  • 3 tablespoons sunflower oil
  • 2 tablespoons apple cider vinegar
  • 2 oranges, only the juice of the orange
  • 1/2 teaspoons salt
  • 1/4 teaspoons pepper

  • Combine the previously disinfected lettuce with Kellogg’s® Ancient Grains Granola; sunflower seeds, amaranth, shredded chicken breast, goat cheese, and sliced black olives.
  • Mix the apple cider vinegar with the orange juice and while whisking, add the sunflower oil. Add salt and pepper.
  • Pour the vinaigrette over the salad and serve.
