Green Salad with Mint Dressing

Delicious recipe for green salad with a fine mint and lemon dressing, perfect to eat alone or as a side dish. The combination of flavors from goat cheese, avocado, lettuce, mint, and zucchini is perfect; try it.

  • 1/2 cups olive oil
  • 1/4 cups lemon juice
  • 1 cup mint leaf , disinfected
  • 1 teaspoon salt
  • 1/2 teaspoons ground black pepper
  • 1/2 cups granulated sugar, Splenda
  • 2 zucchinis, medium and washed
  • 3 sprigs celery, disinfected
  • 1 avocado, medium
  • 1 package goat cheese, natural
  • 6 cups lettuce, organic

  • For the Mint and Lemon Dressing: Blend the first 6 ingredients well in a blender
  • Slice the zucchini into thin rounds
  • Slice the celery and avocado
  • Crumble the goat cheese
  • Manually cut the lettuce into strips and mix it with the Mint and Lemon dressing until well coated
  • Add the zucchini, celery, and avocado with a bit more dressing
