Shan Mango Salad

This sweet and sour mango salad is the perfect accompaniment to a spicy meal.

  • 1 mango, a little green
  • 1 shallot, sliced
  • 1 serrano chile, optional
  • 1 teaspoon sugar
  • 1 tablespoon rice vinegar
  • 1 sprig parsley, chopped

  • Peel the mango and cut it into small cubes.
  • Mix with the sliced shallot and parsley; if desired, I can add chopped chili.
  • Season with sugar, salt, and rice vinegar.
