Eggplant is a delicious vegetable used in Mediterranean and Arab cuisines. In this recipe, the eggplant gains flavor by being cooked directly over the fire.
Prick the eggplants with a fork several times and place them directly over the fire to cook until they blister all around. Remove from the fire and allow to cool for 1 minute.
Cut the eggplants horizontally, remove the inner pulp, and place it in a bowl.
Using a fork, mash the eggplant to make a puree and add the other ingredients. Mix well.
