Surimi Salad with Thousand Island Dressing

This very simple recipe is refreshing for summer days and light for those watching their figure. Where the dressing will be as light as you desire by using low-fat versions, made at home.

  • 2 cups Romaine lettuce, chopped
  • 1/2 red bell peppers
  • 2 sticks surimi
  • 1 tablespoon mayonnaise, low-fat
  • 1 tablespoon sour cream, low-fat
  • 2 tablespoons ketchup
  • 1/2 teaspoons pickles, sweet, processed in the food processor
  • 1 dash Worcestershire sauce
  • 1 handful croutons, (optional)
  • 1 can baby corn, yellow
  • fresh cilantro, finely chopped
  • red onions, finely chopped

  • Place a bed of lettuce on the plate, on top of which we will add the crumbled surimi sticks, sliced bell pepper in small julienne, red onion, and corn kernels. Add croutons if desired.
  • For the dressing, mix the mayonnaise, cream, ketchup, Worcestershire sauce (a touch to taste), and processed pickles.
  • Pour the dressing, as much as you like, over our salad.
