This Thai salad is made with a mix of ingredients commonly used in Thailand and also includes sweet and savory flavors typical of this cuisine. Don’t miss this salad, as it is fresh thanks to the vegetables and the creamy dressing.
1 tablespoon garlic, finely chopped, for the dressing
1 tablespoon ginger, grated, for the dressing
1/2 tablespoons chili paste, for the dressing
2 tablespoons soy sauce, for the dressing
1 tablespoon honey, for the dressing
1 teaspoon rice vinegar, for the dressing
1/4 cups peanut butter, for the dressing
1/2 cups coconut milk, for the dressing
1 1/2 cups carrot, grated
1 cup soybean sprouts
2 green onions, sliced, including the stems
1 cup cilantro, clean and leave only the leaves
1/4 cups peanuts, ground
4 tablespoons lime juice

For the dressing: Heat a pan over medium heat and pour in the vegetable oil, then add the peanuts, garlic, ginger, chili paste, soy sauce, honey, rice vinegar, peanut butter, and coconut milk. Give each ingredient enough time to cook and blend while adding them. After about 5 minutes, remove from heat and set aside.
Gently mix the dressing you prepared in the previous step with the carrot, soybean sprouts, green onion, cilantro, ground peanuts, and lime juice.
Serve and top with Sugar Foods® crunchy Beetroot, accompanied by limes.
