Vegetable and Nut Noodle Salad

  • 3/4 cups orange juice, without seeds, for the vinaigrette
  • 1 tablespoon mustard, for the vinaigrette
  • 2 tablespoons honey, for the vinaigrette
  • 1/2 teaspoons garlic powder, for the vinaigrette
  • 1 teaspoon ginger powder, for the vinaigrette
  • 1/2 tablespoons paprika, for the vinaigrette
  • salt, for the vinaigrette
  • pepper, for the vinaigrette
  • 1/2 cups olive oil, for the vinaigrette
  • 1 cucumber
  • 3 carrots
  • 1 beet
  • 3 sprigs celery
  • 1 pumpkin
  • 1/2 cups parsley, finely chopped
  • 1/4 cups Granut Mix® Energy

  • In a bowl mix the orange juice with the mustard, honey, garlic powder, ginger powder, paprika, salt and pepper until integrated. Pour the olive oil in the form of a thread while continuing to stir, until you get a uniform and slightly thick consistency. Reserve until use.
  • Peel the cucumber, carrot, and beet. Remove very thin strips from the cucumber, carrot, celery and pumpkin using a potato peeler; Place in a bowl and mix.
  • Pour the vinaigrette into the bowl with vegetables, add the chopped parsley and the Granut Mix® Energy, incorporate. Serve immediately
