Vegetable Noodle Salad with Nuts

  • 1 tablespoon mustard, for the vinaigrette
  • 2 tablespoons honey, for the vinaigrette
  • 1/2 teaspoons garlic powder , for the vinaigrette
  • 1 teaspoon ginger powder, for the vinaigrette
  • 1/2 tablespoons paprika, for the vinaigrette

  • 1/2 cups olive oil , for the vinaigrette
  • 1 cucumber
  • 3 carrots
  • 1 beet
  • 3 sprigs celery
  • 1 zucchini
  • 1/2 cups parsley , finely chopped
  • 1/4 cups Granut Mix® Energy

  • In a bowl, mix the orange juice with the mustard, honey, garlic powder, ginger powder, paprika, salt, and pepper until well combined. Slowly drizzle in the olive oil while whisking until you achieve a uniform and slightly thick consistency. Set aside until use.
  • Peel the cucumber, carrot, and beet. Use a vegetable peeler to create very thin strips of cucumber, carrot, celery, and zucchini; place in a bowl and mix.
  • Pour the vinaigrette into the bowl with vegetables, add the chopped parsley and Granut Mix® Energy, and combine. Serve immediately.
