Bean and Corn Salad

  • 1 can ear corn
  • 1 tomatillo, diced
  • 1/2 onions, chopped
  • 1 cup fresh cilantro, chopped
  • 1/3 cups lemon juice
  • 1/3 cups olive oil
  • salt , to taste
  • pepper, to taste

  • Place the can of beans and corn in a salad bowl and mix. Add the onion, tomato, and cilantro.
  • In a cup, mix the lemon juice, oil, salt, and pepper; once combined, mix it with the beans, corn, tomatoes, cilantro, and onion.
