Edamame Salad with Granola

This is a delicious and healthy edamame salad with granola. Perfect for taking care of your health and your family’s. It is made with Kellogg’s® Ancients Grains Granola; sunflower seeds, amaranth, and raisins that give it a crunchy texture. It is very easy and quick to prepare.

  • 1 cup Kellogg’S® granola ancestral grains; sunflower seeds, amaranth and raisins
  • 1/4 cups canned chickpea, drained and rinsed
  • 1 1/2 cups edamame
  • 1 1/2 cups green apple
  • 1/4 cups onion
  • 1/4 cups feta cheese
  • 1 avocado
  • 1 teaspoon ginger
  • 3 tablespoons lime juice
  • 1 tablespoon apple cider vinegar
  • 1/2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, previously washed and disinfected

  • Boil water with salt and add the edamames, cooking them for 5 minutes. Once cooked, place them in cold water to stop the cooking process. Drain the edamames and remove them from the pods.
  • Dice the apple into small cubes, slice the onion, and mix them with the edamames. Add the chickpeas and feta cheese. Mix everything until well incorporated.
  • Add the Ancients Grains Granola; sunflower seeds, amaranth, and raisins, and mix again.
  • For the dressing: Place the avocado pulp and peeled ginger in the blender. Add the rest of the ingredients and blend.
  • Serve the salad along with the dressing.
