Elegant Tomato and Panela Cheese Salad

This is a delicious salad of tomato, panela cheese, cucumber, and pine nuts, to start a nice dinner; presentation is the most important thing to make it look spectacular and appetizing.

  • 1 red beefsteak tomato, large and a little green
  • 250 grams panela cheese
  • 50 grams pine nuts
  • 1 cucumber
  • balsamic vinegar reduction
  • 50 grams cream cheese, for the dressing
  • 2 sprigs fresh cilantro, only the leaves, for the dressing
  • salt and pepper

  • Wash the vegetables. Slice the cucumber very thinly and set aside.
  • Cut the end of the green tomato, then cut it in half on the widest side. Finally, cut each side into four and set aside.
  • Cut the panela cheese into slices about 1 centimeter thick so that they are the same size as the tomato. Set aside.
  • For the dressing: Blend the cream cheese with the cilantro and adjust with salt and pepper if necessary.
  • For assembly: Arrange the tomato and panela cheese in the center of the plate. Serve the cucumber slices on top and in the center. Place the pine nuts between the cheese and drizzle a little dressing over the tomatoes.
