  • 4 San Juan® eggs
  • 80 grams fava beans, green
  • 30 grams raw pea
  • 30 grams asadero cheese
  • 1 tablespoon paprika
  • olive oil
  • chives, or parsley, for garnish

  • Heat enough water until it reaches a boil.
  • Break each egg onto plastic wrap and add a pinch of salt. Then tie it up to form a pouch. Submerge in boiling water for 3 minutes and then set aside.
  • In a bowl, mix the cooked fava beans and peas. Season with salt and pepper, and place in a skillet over medium heat.
  • Add the cheese so it melts slowly.
  • Remove the mixture and serve.
