Kale, Blueberry, and Almond Salad

  • 150 grams yogurt, with Santa Clara® Lemon
  • 1/4 cups olive oil
  • 3 cups kale, washed and dried
  • 2 apples
  • 1/2 cups almonds, sliced and toasted
  • 1/2 cups dried cranberries
  • 1 teaspoon salt
  • 1/2 teaspoons pepper

  • Chop the kale leaves and place them in a salad bowl.
  • Cut the apples into very thin slices and add them to the salad bowl.
  • Add the almonds and blueberries, mix, and set aside.
  • Pour the yogurt into a small baking dish and drizzle the olive oil over it, season with salt and pepper, and serve over the salad or place it separately for everyone to serve themselves as they like.
