Vegetarian deli-style recipe, includes fresh greens, roasted zucchini, eggplant, alfalfa sprouts, and a dressing made from a blend of mustards and honey. It's a delicious option to eat more vegetables, you can enjoy it on its own or as a side dish with another meal.

  • 1 cup Romaine lettuce
  • 1 cup butterhead lettuce
  • 4 endives
  • 1 zucchini, girl, roasted and sliced
  • 1 eggplant, girl, roasted and sliced
  • 20 grams alfalfa sprouts
  • 10 grams sesame seeds
  • 1/2 cups olive oil, for the dressing
  • 6 tablespoons honey, for the dressing
  • 1 tablespoon mayonnaise, for the dressing
  • 1/4 cups balsamic vinegar, for the dressing
  • 2 tablespoons mustard, for the dressing
  • 2 tablespoons Dijon mustard, for the dressing

  • Place the lettuces on the plate as a bed for volume, the endives at each end of the plate, zucchini and eggplant in the middle of the endives, and the alfalfa sprouts in the center of the salad.
  • For the vinaigrette, mix the olive oil, balsamic vinegar, honey, mayonnaise, and the two types of mustard.
  • Drizzle the dressing over the salad to your liking. Finish with a sprinkle of sesame seeds.
