Summer Salad

Prepare this healthy and colorful summer salad. It has a delicious and creamy dressing that is perfect for accompanying any salad. This salad is great for a family meal. It is easy and quick to make.

  • 3/4 cups FAGE® Total 0% greek style yogurt
  • 2 tablespoons lime juice
  • 1 teaspoon garlic
  • 1/4 cups Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon capers
  • 1 tablespoon olive oil
  • 1/2 teaspoons salt
  • 1/4 pepper
  • 3 cups spinach
  • 1 beet
  • 1 carrot
  • 1/4 red cabbages
  • 1/2 cups chickpeas, drained and rinsed
  • 1 yellow bell pepper

  • Chop the spinach, previously washed and disinfected, into medium pieces.
  • Peel the carrot and beet. Cut them into thin strips. You can use a mandoline or a grater if you prefer.
  • Cut the rest of the vegetables into thin strips and arrange them on a plate.
  • For the dressing; Place the FAGE Total® 0% Yogurt in the blender and add the lemon juice, garlic, parmesan cheese, Dijon mustard, capers, and a bit of salt and pepper.
  • While blending, add the olive oil. Pour the dressing into a jar and serve it with the salad.
