Prepare this healthy and colorful summer salad. It has a delicious and creamy dressing that is perfect for accompanying any salad. This salad is great for a family meal. It is easy and quick to make.
Chop the spinach, previously washed and disinfected, into medium pieces.
Peel the carrot and beet. Cut them into thin strips. You can use a mandoline or a grater if you prefer.
Cut the rest of the vegetables into thin strips and arrange them on a plate.
For the dressing; Place the FAGE Total® 0% Yogurt in the blender and add the lemon juice, garlic, parmesan cheese, Dijon mustard, capers, and a bit of salt and pepper.
While blending, add the olive oil. Pour the dressing into a jar and serve it with the salad.
