Vegetarian Jicama Salad

A delicious and refreshing jicama salad with lemon and cilantro dressing.

  • 1 jicama, peeled
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1/4 cups lime juice
  • 1/4 cups olive oil
  • 4 tablespoons fresh cilantro, chopped
  • 1 cup pineapple, in small cubes
  • pepper, to taste

  • Cut the jicama into small cubes.
  • Cut the peppers into small cubes as well, after removing their seeds.
  • In a blender, mix the olive oil, lemon juice, cilantro, salt, and pepper. Blend for 2-3 minutes.
  • In a large deep bowl, mix the jicama, pineapple, peppers, and dressing.
