1 jicama, peeled
1 red bell pepper
1 yellow bell pepper
1/4 cups lime juice
1/4 cups olive oil
4 tablespoons fresh cilantro, chopped
1 cup pineapple, in small cubes
pepper, to taste

Cut the jicama into small cubes.
Cut the peppers into small cubes as well, after removing their seeds.
In a blender, mix the olive oil, lemon juice, cilantro, salt, and pepper. Blend for 2-3 minutes.
In a large deep bowl, mix the jicama, pineapple, peppers, and dressing.
