  • 1 Vita+® orange cup, for the vinaigrette
  • 3 tablespoons balsamic vinegar, for the vinaigrette
  • 1 teaspoon mustard, for the vinaigrette
  • 1/3 cups parsley, for the vinaigrette
  • 1/2 cups olive oil, for the vinaigrette
  • salt, for the vinaigrette
  • pepper, for the vinaigrette
  • 1 Italian Lettuce Eva®
  • 1 Vita+® orange cup, without juice, only segments
  • 1 Vita+® grapefruit cup, without juice, only segments
  • 1 cup cucumber, in half moons
  • 1/2 cups blueberries
  • 1/4 cups cranberries
  • 2 tablespoons sesame seeds, candied

  • Blend the Vita+® Orange Cups along with balsamic vinegar, mustard, parsley, and olive oil. Season with salt and pepper. Set aside until use.
  • In a salad bowl, place the leaves of Italian Lettuce Eva®, add the segments of Vita+® Orange Cups, the segments of Vita+® Grapefruit Cups, cucumber, blueberries, cranberries, and candied sesame. Dress with the vinaigrette and serve with chicken, fish, or tuna.
