Waldorf Salad Ring

Waldorf salad is a holiday classic that was created in New York, inspired by the Waldorf Astoria Hotel. The original recipe for Waldorf salad only had 3 ingredients: apple, celery, and mayonnaise, but over time, more ingredients have been added, such as lettuce, walnuts, or raisins. Try this festive recipe with Eva® Lettuce. You will love it!

  • 1 Eva® butterhead lettuce
  • 2 red apples
  • 2 green apples
  • 1 sprig celery
  • 2 cups red grapes
  • 1/2 cups walnuts, toasted and chopped
  • 1 1/4 cups mayonnaise, for the dressing
  • 1/2 cups plain Greek yogurt, for the dressing
  • 1 tablespoon olive oil, for the dressing
  • 2 tablespoons lime juice, for the dressing

  • 1/2 cups walnuts, toasted and chopped
  • 1/4 cups raisins
  • walnuts, whole, for decoration

  • Remove the leaves from the French Lettuce Eva®, cut into strips, and set aside. Do the same with the red apple and green apple, but there’s no need to remove the skin, just remove the core of the fruit.
  • Finely chop the celery and halve the grapes. Mix all the chopped ingredients in a bowl along with the chopped walnuts until combined. Set aside.
  • For the dressing: Mix the mayonnaise with the Greek yogurt, olive oil, lemon juice, enough salt, and pepper in a bowl.
  • Pour the dressing over the salad gradually, until well combined (reserve some dressing to serve at the table), add the walnuts and raisins, then place the Waldorf salad in a greased silicone ring mold and refrigerate for 30 minutes or until firm.
  • Unmold the Waldorf salad ring and decorate with walnuts. Serve drizzled with a bit more dressing.
