Caesar Dressing

The famous vinaigrette for Caesar salad served over lettuce and with Parmesan cheese. You have to try it!

  • 1 egg
  • lime juice
  • 3 tablespoons garlic
  • 1/2 teaspoons Worcestershire sauce
  • 1/4 teaspoons cayenne pepper, or dry chili powder
  • 1 tablespoon Dijon mustard
  • 2 anchovy fillets, mashed
  • 1 cup olive oil
  • 1/4 cups Parmesan cheese, freshly grated
  • black pepper
  • salt, to taste

  • In a medium bowl, mix the egg, lemon juice, garlic, Worcestershire sauce, dry chili powder, mustard, and anchovies.
  • Slowly add the oil while whisking with a whisk to emulsify.
  • Add the cheese and season with salt and pepper.
