Place the chiles with a little oil to brown in a pan, it doesn't matter if they look a bit charred.
To caramelize the onion: Cut the onion into very thin julienne strips, sauté the onion with oil and a little salt over very low heat. It should become very soft and transparent.
Add the sugar and vinegar to the onion, increase the heat and let it caramelize for about 15 minutes, stirring frequently.
Add the chiles once the onion preparation is ready for 2 minutes. Remove from heat.
Pour the preparation into a bowl, add a drizzle of olive oil and a little bit of Worcestershire sauce.
