Grapefruit and Sesame Vinaigrette

Grapefruit is a low-sodium fruit, rich in fiber, composed of 90% water, and due to its high antioxidant content, it is an excellent choice for preventing cardiovascular diseases, as well as lowering blood pressure. This grapefruit vinaigrette with sesame will be the perfect dressing for your Eva® Mini Romaine Lettuce salads.

  • 1/2 cloves garlic, without peel
  • 1 teaspoon pink peppercorn
  • 1 grapefruit
  • 3 tablespoons lime juice, seedless
  • 1 tablespoon honey
  • 1 tablespoon red wine vinegar
  • 1 tablespoon sesame oil
  • salt
  • 1/2 cups vegetable oil
  • 2 tablespoons sesame seeds, toasted
  • 1 Eva® mini Romaine lettuce
  • 1 cup green beans, blanched
  • 1/2 grapefruit, segments
  • 1/2 cups goat cheese, in small spheres
  • 1/4 cups pistachio, toasted

  • For the vinaigrette: Crush the garlic along with the pink pepper in a molcajete or mortar until you get a paste-like mixture. Set aside.
  • Remove the seeds from the grapefruit and squeeze it with your hand to obtain the juice. Then add the lemon juice, the garlic mixture, pink pepper, honey, red wine vinegar, sesame oil, enough salt, and mix the ingredients with a whisk. Gradually pour in the vegetable oil while stirring until emulsified, that is, until the ingredients are evenly integrated. Pour the vinaigrette into a serving dish.
  • Serve the vinaigrette over a salad of Eva® Mini Romaine Lettuce, blanched green beans, grapefruit segments, sesame, goat cheese, and toasted pistachios. Consume immediately!
