1/4 cups water
3 egg yolks
2 tablespoons lemon juice
1/2 cups unsalted butter , 1 stick
1/4 tablespoons salt

In a medium saucepan, whisk together the egg yolks, water, and lemon juice for 2-3 minutes.
Cook over medium heat, stirring with a wooden spoon until the mixture begins to bubble (approximately 5-6 minutes).
Reduce the heat to low and with the whisk, mix in small pieces of butter gradually until melted and incorporated into the sauce.
Remove the sauce from heat and add the salt.
