Hollandaise Sauce

This delicious sauce is a delicacy in itself, and when used to accompany vegetables, especially asparagus, it translates to a culinary orgasm.

  • 1/4 cups water
  • 3 egg yolks
  • 2 tablespoons lemon juice
  • 1/2 cups unsalted butter , 1 stick
  • 1/4 tablespoons salt

  • In a medium saucepan, whisk together the egg yolks, water, and lemon juice for 2-3 minutes.
  • Cook over medium heat, stirring with a wooden spoon until the mixture begins to bubble (approximately 5-6 minutes).
  • Reduce the heat to low and with the whisk, mix in small pieces of butter gradually until melted and incorporated into the sauce.
  • Remove the sauce from heat and add the salt.
