Citrus Lime-Lemon Dressing

This dressing is for those who love the tanginess of lime. It can be paired with grilled or steamed fish or with vegetables like asparagus, broccoli, and cauliflower.

  • 6 tablespoons olive oil
  • 1 tablespoon capers, canned, drained and rinsed
  • 1 tablespoon lemon juice , freshly squeezed
  • 1 tablespoon lime juice, freshly squeezed
  • 1/2 teaspoons garlic, mashed
  • 1 tablespoon parsley , finely chopped
  • salt , and pepper to taste

  • In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the capers and let them cook for 2 to 3 minutes. Remove from heat and let cool.
  • In a small bowl, mix the juices, garlic, parsley, and remaining tablespoons of olive oil. Season with salt and pepper.
  • Add the capers along with the oil they were cooked in. Adjust seasoning and add more citrus if necessary.
