Creamy Walnut Dressing

This dressing has a slightly sweet flavor that will balance the bitterness of some foods like arugula or salads accompanied by fruit.

  • 1/3 cups nut
  • 3 tablespoons lemon juice , freshly squeezed
  • 1/2 teaspoons mustard
  • 1 teaspoon honey, or maple syrup
  • 3 tablespoons olive oil
  • salt , and pepper

  • Preheat the oven to 180 °C. Place the walnuts on a baking sheet lined with parchment paper and bake for 7 to 9 minutes. Remove from the oven and let cool.
  • Once cooled, rub the walnuts with your hands or with a cotton towel to remove the brown skin.
  • Place the walnuts in a blender and process until finely chopped. Add 2 tablespoons of water, lemon juice, mustard, honey, and oil. Season with salt and pepper.
  • Blend until it has a creamy consistency. If it is too thick, you can add a little more water, 1 teaspoon at a time, to avoid making it too runny.
