1/4 cups white wine vinegar, or red wine
1 tablespoon shallot, finely crushed
1 clove garlic, finely crushed
3/4 cups olive oil
1/2 teaspoons salt
pepper
1/3 cups fresh herbs, finely chopped (parsley, basil, oregano, cilantro, dill, and/or chives)

In a small bowl, mix the vinegar, shallot, and garlic.
Stir in the oil until you achieve a creamy consistency.
Season with salt and pepper. Add the fresh herbs.
Taste and adjust the seasoning if necessary.
