Fresh Herb Vinaigrette

This vinaigrette is perfect for potato salads, with beans, or with tomatoes; once you try it, you may find some other options to accompany.

  • 1/4 cups white wine vinegar, or red wine
  • 1 tablespoon shallot, finely crushed
  • 1 clove garlic, finely crushed
  • 3/4 cups olive oil
  • 1/2 teaspoons salt
  • pepper
  • 1/3 cups fresh herbs, finely chopped (parsley, basil, oregano, cilantro, dill, and/or chives)

  • In a small bowl, mix the vinegar, shallot, and garlic.
  • Stir in the oil until you achieve a creamy consistency.
  • Season with salt and pepper. Add the fresh herbs.
  • Taste and adjust the seasoning if necessary.
