2 tablespoons red wine vinegar, apple cider vinegar
2 teaspoons lime juice, freshly squeezed
1 teaspoon Dijon mustard
1/2 teaspoons oregano
1/2 teaspoons basil
1/2 teaspoons thyme
1 clove garlic, finely crushed, medium size
1/2 cups olive oil
salt, and pepper to taste

In a small bowl, add the vinegar and, while stirring, add the lemon juice, mustard, herbs, and garlic.
While continuously stirring, add the oil in a steady stream; it is important not to stop stirring and to mix well to emulsify everything.
Season with salt and pepper and dress your salads.
