Italian Herb Vinaigrette

To accompany any salad, this Italian-style vinaigrette has fresh herbs that will enhance the flavor of your dish.

  • 2 tablespoons red wine vinegar, apple cider vinegar
  • 2 teaspoons lime juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoons oregano
  • 1/2 teaspoons basil
  • 1/2 teaspoons thyme
  • 1 clove garlic, finely crushed, medium size
  • 1/2 cups olive oil
  • salt, and pepper to taste

  • In a small bowl, add the vinegar and, while stirring, add the lemon juice, mustard, herbs, and garlic.
  • While continuously stirring, add the oil in a steady stream; it is important not to stop stirring and to mix well to emulsify everything.
  • Season with salt and pepper and dress your salads.
