  • 3 ancho chiles, clean, seedless, and deveined
  • 4 guajillo chiles, clean, seedless, and deveined
  • 5 morita chiles, clean, seedless, and deveined
  • 2 egg yolks
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tablespoons mustard
  • 2 cups vegetable oil
  • 2 tablespoons white vinegar
  • 1 tablespoon lime juice

  • Preheat the oven to 160° C
  • For the chili powder: On a baking sheet, spread the chiles and bake for 5 minutes until they release their aroma. Remove from the oven and when cool, blend to obtain a fine powder.
  • In a bowl, beat the egg yolks with salt and pepper to taste until they double in volume and change color.
  • Add the mustard and keep beating, then add the vegetable oil in a steady stream until the mayonnaise forms, then add the white vinegar and lemon juice without stopping beating. Finally, add the chili powder. Refrigerate.
  • Serve the mayonnaise in a glass jar and use it for whatever you like the most.
